Real wasabi, also known as true or authentic wasabi, is a condiment made from the rhizome (root-like stem) of the Wasabia japonica plant. It is most commonly associated with Japanese cuisine and is known for its distinctive, pungent flavor.
The wasabi commonly found in many restaurants, especially outside of Japan, is often a mixture of horseradish, mustard, and other ingredients. This is because genuine wasabi is challenging to grow and harvest, and the demand for it often exceeds its supply. Real wasabi is highly prized in Japanese cuisine for its unique flavor and is considered a delicacy. If you have the opportunity to try it, you’ll experience a more authentic and nuanced taste compared to the common wasabi substitutes.
I was fortunate to try some in an Osaka market. To say it was intense is an understatement. Nothing like the “wasabi” found in North America.
